I'm dealing with something similar right now - filed my claim on July 5th (the day after the holiday) and it's been showing as pending for 3 days now. Reading through everyone's experiences here is really helpful! I was starting to panic thinking something was wrong with my claim, but it sounds like the holiday really did mess up the usual timing. Going to wait another day or two before I start calling. It's frustrating how they don't give any heads up about these delays though - would save a lot of stress if they just posted a notice about holiday processing times.
Bottom line is that employers who don't respond are basically giving up their right to contest your claim. Washington ESD will proceed based on your information and their own records. Stay patient and keep filing your weeklies.
I went through this exact same situation about 6 months ago with my previous employer who was terrible about responding to anything official. Washington ESD gave them the standard 10 business days to respond, and when they didn't, my claim was approved automatically. The whole process took about 3 weeks from start to finish, and I received a letter explaining that since my employer failed to provide their side of the story within the required timeframe, they proceeded with my version of events. Just make sure you keep filing your weekly claims during this waiting period - that's super important. The silver lining is that non-responsive employers can't come back later and cause problems with your claim like some of the horror stories you hear about employers who lie or contest everything.
When I got laid off last year I chose NO withholding for the first two months then switched to YES for the rest of my unemployment period. It was kind of a compromise - I needed the full amount at first while I was adjusting my budget, then switched to withholding once I had my expenses under control. Just sharing another approach!

Just to add to what others said - if your employment doesn't work out within the benefit year (which runs for 12 months from when you first applied), you can reopen your existing claim rather than filing a completely new one. This is called "reopening" a claim and it's much simpler than starting from scratch. Just something to keep in mind just in case.
Congratulations on your new job! Based on everyone's advice here, it sounds like the key is to report your earnings accurately for any week you worked (even partially) and then just stop filing claims after that. UPDATE: The money just hit my account! It was exactly 34 hours after the status changed to 'paid' on the ESD website. Thanks everyone for your help and reassurance. Such a relief to finally have some funds again.

So glad to see your update that the money came through! 34 hours is pretty typical for KeyBank in my experience. For anyone else reading this thread who might be in a similar situation - hang in there. I know how nerve-wracking it is when you're waiting for that deposit and running on fumes. The system really does work, it just takes time unfortunately. And like others mentioned, once you get through that first payment after adjudication, the future ones become much more predictable timing-wise.
